Saeujeot (Salted Shrimp) is made with fresh shrimp caught along Korea’s western coast and naturally fermented with solar salt inside a geologic rock cave. The cave maintains a stable temperature of 11–12°C throughout the year, allowing the shrimp to mature slowly and develop a distinctive, deep flavor.

Hwangseogeojeot (Salted Yellow Corvina) is prepared using fresh yellow corvina from the West Sea and fermented in the same natural cave environment.
